Boxed Lunches: A Great Meal for a Great CauseCURRENT MENU! Humboldt Senior Resource Center’s Senior Nutrition Program has four boxed lunches on our menu. Boxed lunches are the perfect choice for business meetings. Best of all, proceeds from Boxed Lunches help to fuel the Home Delivered Meal & Congregate Programs. Turkey Ranch Club: Roast turkey breast, crispy diced bacon and a blend of cheddar and mozzarella cheeses melted on warm ciabatta then topped with creamy ranch dressing, lettuce and tomato. Chicken Caesar Salad: Diced chicken with fresh parmesan cheese, drizzled with creamy caesar dressing, homemade croutons, romaine lettuce, and plump tomatoes served with crispy fresh baked sourdough garlic bread. Mediterranean Mushroom Melt: A juicy portabella mushroom cap marinated in balsamic vinaigrette and topped with melted provolone cheese on toasted ciabatta with roasted red bell pepper pesto sauce. Asian Pulled Pork: Fall apart slow roasted pork shoulder meat marinated in a mild sauce topped with melted provolone cheese on warm ciabatta with chef's special asian slaw on the side.
